Mormon bachelor pudding

The followers of Brigham Young, the Mormons, came to Utah from many countries of the world. Their food was a "melting pot" cuisine, which they adapted to the available ingredients of the area. Simply prepared and heavily loaded with apples and raisins, this steamed pudding was a favorite.
- 1 egg;
- 2 tablespoons butter, melted;
- A dash of nutmeg;
- 1 teaspoon grated lemon rind;
- 2 large apples, pared, cored, and chopped (about 2 cups);
- 2 cups soft bread crumbs;
- 1 cup raisins or currants;
- 1⁄2 cup sugar;
- Golden Brown Sugar Sauce
- Butter a 1-quart steamed-pudding mold. Fit a deep pot with a rack (canning jar rings work well) and add water until it just reaches the top of the rack. Bring water to a boil.
- In a large bowl, beat the egg with the butter, nutmeg, and lemon rind until well blended. Add the apples, bread crumbs, raisins, and sugar. Turn this dry, crumbly mixture into the prepared pudding mold. Cover tightly and place on the rack in the pot with the boiling water (water should not touch the mold). Steam for 2 hours, adding more boiling water to the pot as necessary. Unmold and serve hot with Golden Brown Sugar Sauce
