Naan
Instructions:
This traditional bread is made with yogurt, a staple of
Indian cooking, and cooked in a tandoori oven. If you use
a pizza stone to bake the bread in this recipe, it will come
out crustier and more authentic.
3 cups all-purpose flour
1 cup whole-wheat flour
1 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
2 tablespoons margarine
1 egg
1 cup low-fat or nonfat milk
3⁄4 cup plain yogurt
vegetable oil cooking spray
2 tablespoons margarine
1 tablespoon poppy seeds
- Using a sifter, sift the flours, baking powder, baking soda, and salt together in a large bowl.
- Place 2 tablespoons margarine in a small microwave-safe dish and put a lid on top. Microwave on full power for about 30 seconds or until melted.
- Break the egg into a medium bowl. Beat with a fork.
- Add the milk, yogurt, and melted margarine to the egg. Use a whisk to beat.
- Make a shallow hole in the middle of the flour mixture. Pour the egg mixture into the well, and stir with a wooden spoon to form a soft dough.
- Cover the dough with a kitchen towel and put in a warm place for 2 hours.
- Preheat the oven to 400 F.
- On a lightly floured surface, knead the dough for 2 to 3 minutes by pushing the dough away from you and then folding it over until the dough is smooth and silky.
- Divide the dough into 8 pieces. Roll each piece of dough into a ball, then shape into a flattened oval about 6 inches long.
- Spray a cookie sheet (or pizza stone) with vegetable oil cooking spray. Place the bread loaves on the cookie sheet (or pizza stone).
- Again, place 2 tablespoons margarine in a small microwave-safe dish and put a lid on top. Microwave on full power for about 30 seconds or until melted.
- Using a pastry brush, brush the bread loaves with the melted margarine. Sprinkle with poppy seeds.
- Use oven mitts to put cookie sheet (or pizza stone) in oven. Bake at 400 F for 6 to 10 minutes until puffy and golden brown. Use oven mitts to remove the cookie sheet (or pizza stone) from the oven.
- Let the bread sit for 10 minutes. Serve warm.
