Nearly instant radish pickles
Instructions:
- Spread the radish slices evenly on a serving plate. Sprinkle with the salt and sugar and let sit at room temperature until moist and a little juicy, 5 to 10 minutes. Serve immediately.
- What else works? You can use this same method to pickle ribbons of cucumber, carrots, summer squash, and zucchini and very thin slices of melon and seedless watermelon. When using a combination of vegetables, prepare each one separately because each releases moisture at its own rate.
