North Carolina Date Cake
Instructions:
- 1 1/3 cups of flour
- 1 cup of light brown sugar
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 tablespoon of butter
- 3/4 cup of chopped pecans 1
- cup of chopped dates to which 1 cup of boiling water has been poured over.
- 1 beaten egg
- Cream butter and add the dry ingredients.
- Add nuts dates and water. Mix well.
- Stir in the beaten egg.
- Pour into a greased 8” X 8” pan and bake at 350 degrees for 45 minutes.
- Topping:
- 1 cup of light brown sugar
- 1/2 cup of sour cream
- 1 cup of da tes, finely chopped
- Boil the brown sugar and sour cream together for about 10 minutes on low heat.
- Add the dates and boil for 5 minutes longer.
- Let cool and spread on cooled cake.
