Oatmeal Raisin Cookies

- 1/2 cup butter or oil
- 1 1/3 cups maple syrup
- 1 teaspoon vanilla
- 1 egg
- 3/4 cup raisins (or chopped dates)
- 3/4 cup walnuts or pecans, chopped (optional)
- 2 2/3 cups regular rolled oats
- 3 cups pastry flour
- 2 teaspoons baking soda
Instructions:
This is another classic cookie I’ve tweaked by using maple syrup instead of sugar. The maple syrup balances the raisins and oats for a cookie that is almost good enough for breakfast.
- Preheat the oven to 350 degrees and grease a baking sheet.
- In a large bowl, stir together the butter, maple syrup, vanilla, and egg, then mix in the raisins and nuts. In a separate bowl, combine the oats, flour, and baking soda. Stir the oat mixture into the wet dough. Scoop up large spoonfuls of the dough, roll them into balls, and place them on the prepared baking pan.
- Bake for about 12 minutes.
