Okra Fritters
Instructions:
- 1 quart of okra
- Salt
- Black pepper
- 2 eggs
- 2 teaspoons of baking powder
- Flour
- Boil the okra until tender the strain off water and mash.
- Season with salt and pepper to taste.
- Mix in the eggs, baking powder, and enough flour to make a still batter.
- Drop by one rounded tablespoonful at a time in hot oil and fry until golden brown.
