Old Arkansas vinegar pie
Instructions:

Surprisingly, this unusual pie tastes a lot like lemon meringue pie.
- 2 cups boiling water;
- 1⁄4 cup Arkansas apple cider vinegar;
- A dash of salt;
- 1 teaspoon lemon juice;
- 1 cup plus 3 tablespoons sugar;
- 3 tablespoons all-purpose flour;
- 3 egg yolks, lightly beaten;
- 1 baked 9-inch pie shell;
- 3 egg whites.
- In a heavy saucepan, combine the boiling water, vinegar, salt, and lemon juice. Mix 1 cup sugar with the flour, and stir into the vinegar mixture. Cook, stirring constantly, over medium heat until thickened. Stir a small amount of the thickened mixture into the egg yolks, then combine the yolk mixture with the rest of the thickened mixture. Bring to just a boil, stirring constantly. Remove from the heat. Pour filling into the pie shell.
- Preheat oven to 450 F.
- In the large bowl of an electric mixer, whip the egg whites until foamy, then beat in the remaining 3 tablespoons sugar; beat until stiff. Spread the meringue over the filling in the pie shell. Bake 10 minutes; reduce heat to 300 F. and bake another 15 minutes.
