Old Fashioned Baked Beans
Instructions:
- An heirloom recipe for not-too-sweet baked beans. This makes a batch big enough for a Fourth-of-July barbecue or a winter potluck party.
- 2 packages (16 ounces each) dry navy (pea) beans, soaked and drained
- 71â„2 cups water
- 4 slices bacon, cut into 1-inch pieces, or
- 4 ounces salt pork, finely chopped
- 2 medium onions, chopped
- 1â„2 cup dark molasses
- 1â„3 cup packed brown sugar, preferably dark
- 5 teaspoons salt
- 4 teaspoons dry mustard
- Preheat oven to 350 F. In 8-quart Dutch oven, combine beans and water; heat to boiling over high heat.
- Cover and place in oven. Bake 1 hour. Stir in bacon, onions, molasses, brown sugar, salt, and dry mustard.
- Cover and bake, stirring occasionally, 1 hour. Remove cover and bake until sauce is thickened and coats beans, 1 hour 30 minutes to 2 hours longer.
- Makes about 11 cups or 14 accompaniment servings.
