Old-fashioned fruit tumble
Instructions:
-
Golden Delicious apples will survive a year of storage so that they can add their texture to a compote of fresh summer fruits. Early American cooks would often just "tumble" together a variety of fruits to make a simple dessert.
- 2 Golden Delicious apples, pared, cored, and thinly sliced;
- 4 peaches, peeled and thinly sliced;
- 2 tablespoons fresh lemon juice;
- 1 cantaloupe, seeded;
- 2 cups strawberries, hulled;
- 1 cup blueberries;
- 1⁄3 cup honey;
- 2 tablespoons dark rum;
- 3 tablespoons sweet butter;
- Fresh mint leaves for garnish.
- In a bowl, combine the apple and peach slices with the lemon juice. Scoop out balls of the cantaloupe and add them to the bowl, along with the strawberries and blueberries.
- Combine the honey, rum, and butter in a saucepan; heat until the butter is melted.
- Turn the fruit mixture into a serving bowl, or divide among 8 serving dishes. Spoon the sauce over the fruit and garnish with fresh mint leaves.
