Old Fashioned Oatmeal Cookies
Instructions:
- 2 cups sifted flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons cinnamon
- 2 cups quick-cooking oatmeal
- 1 cup brown sugar, firmly packed
- 1 cup granulated sugar
- ¾ cup shortening (soft)
- 2 eggs, beaten
- ½ cup milk (sour milk okay)
- 1 teaspoon vanilla
- 1 cup seeded raisins or chopped dates
- ½ cup nut meats, chopped
- Let all ingredients reach room temperature.
- Grease cookie sheet and preheat oven to 375 degrees F.
- Sift together flour, baking soda, salt, cinnamon. Stir oatmeal into other dry ingredients.
- Blend brown sugar and granulated sugar into shortening.
- Beat eggs lightly, add vanilla, and blend into sugar/shortening, then blend all into flour mixture, adding milk until all is mixed together.
- Scrape bowl while beating.
- Add raisins and/or dates and chopped nuts. Drop from teaspoon on prepared cookie sheet.
- Bake at 375 degrees for 12 to 15 minutes.
- Makes up to 8 dozen cookies.
