Old maine blueberry batter cake

Although this sounds like it belongs in the category of cakes, it is really a delicious saucy blueberry baked pudding, which is wonderful served warm with cream to pour over it. It has a cakelike top with a blueberry sauce beneath. It is easier to make than blueberry pie, but the flavors are similar.
- 2 cups fresh or frozen unsugared blueberries;
- 4 tablespoons lemon juice;
- 13⁄4 cups sugar;
- 1 cup all-purpose flour;
- 1 teaspoon baking powder;
- 1⁄4 teaspoon salt;
- 3 tablespoons butter, at room temperature;
- 1⁄2 cup milk;
- 1 tablespoon cornstarch;
- 1 cup boiling water.
- Preheat oven to 350 F.
- Butter a 9-inch-square or an 1 l-by-7-inch baking dish, and sprinkle the blueberries in an even layer over the bottom of the dish.
- Drizzle with lemon juice. In the large bowl of an electric mixer, combine 3⁄4 cup sugar, the flour, baking powder, salt, and butter. Mix 1 minute until blended. Add the milk. Mix just until blended, and spoon this batter over the blueberries in the dish. Combine the remaining 1 cup sugar with the cornstarch, and sprinkle it over the batter. Pour the boiling water over it. Bake for 1 hour, until the top is golden and the blueberry sauce is bubbly around the edges. Serve warm.
