Old Williamsburg golden pecan pie

Thomas Jefferson loved pecans and planted hundreds of pecan trees. He was generous in giving nuts to his friends. In 1775, George Washington planted pecan trees at Mount Vernon. Three of the trees are still growing on the banks of the Potomac. This version of our classic pecan pie is made with light corn syrup, which produces a nutty, buttery-tasting pie.
- 4 eggs;
- 3⁄4 cup sugar;
- 1⁄2 teaspoon salt;
- 11⁄2 cups light corn syrup;
- 1 tablespoon butter, melted;
- 1 teaspoon vanilla;
- 1 cup pecan halves;
- 1 unbaked 9-inch pie shell.
- Preheat oven to 400 F.
- In a large bowl, beat the eggs with sugar, salt, syrup, butter, and vanilla. Spread pecan halves on the bottom of the pie shell. Pour in filling. Place pie in oven, reduce heat to 350 F., and bake 40 to 50 minutes, or until pie is set in the center. Cool before serving.
