Orange chipotle glaze
Instructions:
- 1⁄3 cup fresh orange juice;
- 3⁄4 cup red wine vinegar;
- 1⁄2 cup soy sauce;
- 11⁄2 cups sugar;
- 2 tablespoons canned chipotle chiles in adobo sauce, finely chopped, or to taste;
- 11⁄2 cups sweet orange marmalade.
- Combine the orange juice, vinegar, soy sauce, and sugar in a large saucepan. Mash the chipotles with a fork until smooth and add to the orange juice mixture. Bring to a boil over high heat, stirring to dissolve the sugar. Reduce the heat and simmer until the sauce has reduced by half, about 30 minutes.
- Stir in the marmalade and cook until melted, about 2 minutes. The sauce should thickly coat the back of a spoon. Serve warm or let cool, cover tightly, and refrigerate for up to 1 month. Reheat gently for serving.
