Orange custard pudding
Instructions:
- 2 oranges
- 1 teaspoon sugar
- 1 quart milk
- 3 egg yolks
- 1 cup sugar
- 3 tablespoons flour
- 1 teaspoon vanilla
- 3 egg whites (4 makes it even better)
- 2 teaspoons sugar
- Peel, skin, and cut oranges in pieces.
- Sprinkle the 1 teaspoon of sugar over oranges and set aside.
- Scald milk but do not boil. Mix egg yolks, 1 cup of sugar, and flour, then slowly add to scalded milk.
- Cook over medium heat until slightly thick.
- Remove from heat and add vanilla and blend.
- Pour into baking dish or individual custard baking dishes.
- Drop the pieces of sugared orange into the custard.
- Beat egg whites until stiff, gradually adding 2 teaspoons of sugar. Beat until smooth and shiny.
- Top custards with sugared egg whites and broil in oven until meringue turns golden brown.
- Cool and refrigerate. Serve ice cold.
- This can be a delicious basic custard recipe if the orange pieces are omitted.
- Coconut or bananas can be added for variety.
