Orange Nut Bread
Instructions:
- 1 orange
- 1 cup of raisins
- 1 cup of pecans
- 1 cup of hot orange juice
- 1 teaspoon of baking soda
- 1 cup of sugar
- 1 teaspoon of vanilla
- 1 beaten egg
- 2 cups of flour, sifted
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- Using a sharp knife, peel the outer rind from the orange.
- Grind the orange rind, raisins, and the pecans using the finest blade on a food processor and transfer to a bowl.
- Pour in the hot orange juice, mix in the baking soda, sugar, vanilla, egg, and the flour sifted with the baking powder and salt.
- Mix well and pour into a greased loaf pan and bake for 50 minutes at 350 degrees.
