Oven-toasted okra
Instructions:
- Preheat the oven to 400 F.
- Trim the stem ends of the okra to within 1⁄4 inch of the pod. Leave very small pods whole. Cut larger pods into 1⁄2-inch rounds.
- Stir together the butter and oil in a small bowl. Stir together the crumbs, paprika, salt, and pepper on a plate.
- Working with a few pieces at a time, dip the okra in the butter mixture and then toss in the crumbs until they are lightly and evenly coated. Shake off the excess crumbs and arrange the okra in a single layer on a rimmed baking sheet.
- Bake until the crust is lightly browned and the okra is tender, about 15 minutes for sliced okra and 20 minutes for whole pods. Sprinkle with a little more salt and serve hot.
