Parmesan-crusted green tomatoes
Instructions:
- Preheat the broiler.
- Core the tomatoes and use a serrated knife to cut them crosswise into 1⁄3-inchthick slices. Sprinkle both sides with the salt and pepper. Arrange them in a single layer on a rimmed baking sheet lined with parchment paper. Cover the tops with a thin, even layer of cheese.
- Broil until the cheese is melted and golden brown, 8 to 12 minutes, depending on the distance between the tomatoes and the broiler. Serve hot.
