Pasta Allocca
Instructions:
- 1 pound protein enriched or whole wheat pasta
- 6 cloves garlic, chopped
- 1 red bell pepper, chopped
- 1/2 pound mushrooms, sliced
- 1/2 pound of green vegetable (kale, broccoli, etc.)
- 3 tablespoons cold pressed olive oil
- 1 (16 oz. can) pitted black olives, chopped
- 1 (16 oz. can) diced tomatoes
- 1/2 teaspoon basil
- 1/4 teaspoon black pepper
- Dash of cayenne pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon parsley
- 1/2 teaspoon sea salt
- Place the olive oil in a deep skillet.
- Sauté\' the onions and peppers for 5 minutes (medium heat).
- Add the mushrooms and cook for 5 minutes (medium heat).
- Add the garlic to the skillet and continue to sauté for another 5 minutes.
- Add the remaining ingredients and continue to sauté for another 10 minutes.
- Begin cooking the pasta (8-10 minutes).
- Continue cooking until pasta is cooked. Drain pasta.
- Place into pasta dish and pour contents of both skillets over pasta and mix thoroughly.
- Serves 2 to 4 people.
