Peach Salsa
Instructions:
For the best flavor, wait until it is the height of peach season to make this salsa. Spoon it over grilled chicken breasts or pork chops.
- 13â„4 pounds ripe peaches (5 medium), peeled, pitted, and chopped
- 2 tablespoons finely chopped red onion
- 1 tablespoon chopped fresh mint
- 1 teaspoon seeded, minced jalapeño chile
- 1 tablespoon fresh lime juice
- 1â„8 teaspoon salt
- In medium bowl, gently stir peaches, onion, mint, jalapeño, lime juice, and salt until well mixed.
- Cover and refrigerate 1 hour to blend flavors or up to 2 days.
- Makes about 3 cups.
