Peanut and sorghum vinaigrette
Instructions:
- Place the peanuts, shallot, sorghum, and vinegar in a blender and blend until chopped.
- With the blender running, slowly add the oil and blend until the dressing is mixed. Season with salt and pepper. If you use salted peanuts, you might not need more salt.
- Use soon or transfer into a glass jar with a tight-fitting lid and refrigerate for up to 3 days. Return to room temperature, shake vigorously, and check the seasoning before serving.
