Pear walnut pudding
Instructions:

This pudding is something like a very moist cake and is delicious served warm out of the oven with a topping of whipped cream.
- 2 eggs;
- 1 cup sugar;
- 2⁄3 cup sifted all-purpose flour;
- 1⁄4 teaspoon salt;
- 21⁄2 teaspoons baking powder;
- 2 cups peeled and cored chopped fresh pears;
- 1 cup chopped walnuts;
- 2 teaspoons lemon juice;
- 1⁄2 cup flaked coconut;
- Whipped cream (optional).
- Preheat oven to 350 F. Butter a 9-inch-square baking dish.
- Beat the eggs, and gradually add the sugar, beating until fluffy. Sift the flour with the salt and baking powder into the egg mixture. Blend well. Fold in the pears, nuts, and lemon juice. Pour mixture into the prepared baking dish. Sprinkle coconut over the top. Bake 30 minutes, or until top is golden. Serve warm or cold, cut into squares and topped with whipped cream, if desired.
