Peasants Salad from Bugac
Instructions:
This salad often serves as an appetizer in main meals
4 green bell peppers, cut into thin
strips
2 tomatoes, quartered and thinly
sliced
1 small cucumber, sliced into thin
disks
1 onion, thinly sliced into rings
2 TBS salad oil
3 TBS white wine vinegar
salt to taste
6 ounces salted hard white cheese
( feta or kaskaval), grated
1 cup chopped parsley
- Mix vegetables in a bowl. Season.
- Whisk salad oil, vinegar, salt, and cheese. Pour over the vegetables
- Cover and refrigerate for 1–2 hours.
- Garnish with chopped parsley.
- Serve as a first course.
