Pepper and cabbage salad
Instructions:
- 1⁄2 cup rice vinegar;
- 1 small (1 pound) red or green cabbage, shredded;
- 2 large red or green bell peppers, or a combination, cut in thin strips;
- 1 small onion, cut in half and sliced thinly;
- 2 cloves garlic, finely chopped.
- Toss vinegar with cabbage, peppers, onion and garlic.
- Refrigerate for several hours before serving.
