Perfect iced tea
Instructions:
- If there is one thing Southerners are known for, it’s our iced tea. We
pretty much get weaned off of milk with it (I am not exaggerating here)
and drink it at every meal save for breakfast (but even then it’s entirely
acceptable). When folks find out that I write about Southern food, the
one thing I hear most often is “I just can’t make good tea.” So far, I’ve
been able to remedy this each time because the mistake is a simple
and common one—pouring hot water directly over your sugar. This
scorches it and causes the tea to have a bitter flavor. The simple
solution is to add a bit of cold water before pouring the hot tea in.
Works every time!
- 5 tea bags
- ¾ cup sugar
- Place the tea bags in a saucepan or coffee maker (down in the coffeepot). If using a coffeepot, run a cycle of water through to make tea.
- If using a saucepan, fill about 3 inches and bring just to a boil, then remove from the heat.
- Fill a 2-quart pitcher halfway with cool water and add the sugar.
- Stir. Add the hot tea and stir. Add more water, if necessary, to make 2 quarts. Serve over ice.
