Perfectly Simple Tomato Sandwiches
Instructions:
- From lemon, grate 1â„2 teaspoon peel and squeeze 1 teaspoon juice. In small bowl, combine mayonnaise, lemon peel and juice, coriander, salt, and pepper until well blended.
- Cut eight 1â„2-inch-thick slices from center of bread. (Reserve ends for another use.) Toast bread, if desired. Spread mayonnaise mixture on each bread slice. Arrange tomato slices on 4 bread slices; top with remaining bread slices. To serve, cut each sandwich in half. Makes 4 main-dish servings.
