Pesto vinaigrette
Instructions:
- Combine the pesto, vinegar, lemon zest, lemon juice, and oil in a small glass jar with a tight-fitting lid. Close the jar and shake vigorously to combine the ingredients. Season with salt and pepper.
- Use soon or refrigerate for up to 4 days. Return to room temperature, shake vigorously, and check the seasoning before serving.
