Pickling Spice
Instructions:
A traditional spice blend that gives a pickled flavor to virtually
anything;
Two 3-inch cinnamon sticks
10 bay leaves
2 small dried hot red chiles (like Thai) or 1 tablespoon
hot red pepper flakes, or to taste
1/4 cup mustard seeds
2 tablespoons allspice berries
2 teaspoons cloves
2 tablespoons black peppercorns
2 tablespoons coriander seeds
2 teaspoons cardamom seeds
2 tablespoons dill seeds
MAKES: About 1 cup
TIME: 10 minutes
- Break the cinnamon sticks, bay leaves, and chiles into pieces.
- Roughly chop (or crush by pressing on the spices with a heavy skillet) all the other ingredients, leaving most of the seeds whole.
