Pina colada
Instructions:
- Remove the top and bottom from the pineapple. Cut away the skin and the first 1⁄4 inch of flesh.
- Slice the pineapple in half lengthwise, then cut into chunks.
- Put into a deep container, then process with a hand-held blender until smooth. Alternatively, use a food processor.
- Add the coconut milk and rum, then blend again.
- Strain the mixture through a fine-mesh strainer, then chill in the fridge.
- Serve the pina colada in bowls or glasses, with your choice of topping.
