Pineapple with molasses and lime
Instructions:
- Slice the top and bottom off the pineapple.
- Cut away the skin and the first 1⁄4 inch of flesh.
- Slice the pineapple in half lengthwise.
- Cut each half into four.
- Cut away the tough inner core.
- Slice each piece into chunks about 1⁄2 inch thick.
- Arrange evenly on a serving dish.
- Finely grate the lime zest over the pineapple.
- Squeeze over the lime juice.
- Finish with a drizzle of the molasses to serve.
