Pinto Bean Soup
Instructions:
- 2 cups of cooked pinto beans
- 1/2 cup of chopped onion
- 2 1/2 cups of chicken stock
- 1/2 cup of tomato juice
- 3 tablespoons of butter
- 2 minced garlic cloves
- Sour cream
- Cook the onions in the butter.
- Add the pinto beans, chicken stock, and the minced garlic and mix well.
- Pour into saucepan and simmer for 10 minutes.
- Add the tomato juice and cook until heated through.
- Serve with a spoonful of sour cream on top.
