Pistachio custard
Instructions:
- Pour the milk and cream into a saucepan and bring to a boil. Meanwhile, whisk together the egg yolks and sugar in a large bowl.
- Pour in the hot milk and cream,whisking continuously.
- Pour the mixture back into the pan over low heat. Cook for 5-10 minutes, stirring frequently with a spatula, until thickened.
- Put the pistachios into a bowl and pour in the hot custard.
- Process in a food processor or with a hand-held blender until very smooth and creamy.
- Pour into small glasses or serving bowls and chill thoroughly in the fridge.
