Poached Pears in Red Wine
Instructions:
- 4 whole pears
- 1 fresh lemon
- 1/2 bottle red wine
- 1/2 cup sugar
- 1/2 stick cinnamon (1 tsp ground)
- Pinch of nutmeg
- Peel pears, leaving stem. Remove core from the bottom. Lightly rub pears with cut lemon to prevent browning.
- In a heavy saucepan, combine wine, sugar, cinnamon, and nutmeg. Add pears and bring to a boil.
- Turn pears frequently to coat with mixture.
- Reduce heat and simmer for about 30 minutes or until pears are tender but still firm (a butter knife should go in easily).
- Remove from pan and chill in the sauce until serving.
- Serve on decorative plates and top with sauce.
