Poor mans rice pudding

In Colonial days, sugar was more expensive and less available than molasses, so molasses was considered a "poor man's" sweetener. Molasses adds delicious flavor and amber color to this pudding.
- 1⁄4 cup rice;
- 4 cups milk;
- 1⁄2 teaspoon salt;
- 1⁄3 cup molasses;
- 1⁄2 teaspoon cinnamon;
- 1⁄2 cup raisins;
- 1 tablespoon butter.
- Preheat oven to 300 F. Butter a 2-quart casserole or ovenproof pudding bowl.
- Combine rice, milk, salt, molasses, and cinnamon. Pour into prepared casserole or pudding bowl. Bake, uncovered, for 3 hours. Stir three times with a fork during the first hour of baking, so that the rice will not settle. After the first hour, stir in the raisins and the butter. Serve warm.
