Popovers
Instructions:
Popovers are crispy on the outside and hollow on the inside. Serve them fresh from the oven or make them ahead and reheat in a 400°F oven for 15 minutes. 3 large eggs 1 cup milk 3 tablespoons butter or margarine, melted 1 cup all-purpose flour 1â„2 teaspoon salt
Makes 8 medium or 12 small popovers Prep: 10 minutes Bake: 1 hour.
- Preheat oven to 375°F. Generously grease eight 6-ounce custard cups or twelve 21â„2" by 11â„4" muffinpan cups with butter or vegetable oil. Place custard cups in jelly-roll pan for easier handling.
- In blender, combine eggs, milk, melted butter, flour, and salt; blend until smooth.
- Pour about 1â„3 cup batter into each prepared custard cup, or fill muffin-pan cups half full. Bake 50 minutes, then, with tip of knife, quickly cut small slit in top of each popover to release steam; bake 10 minutes longer. Immediately remove popovers from cups, loosening with spatula if necessary. Serve hot.
