PORK CHOP LOVER'S DELIGHT

- 1 egg
- ½ cup milk
- 2 tablespoons all-purpose flour
- 2 cups finely crushed saltines
- Ten 4-ounce pork chops
- Salt and pepper to taste
- ½ cup vegetable oil
- 2 cups Salsa Ranchera
Instructions:
- Whisk together the egg and milk in a shallow bowl. Put the flour on a plate and spread the crushed saltines on another plate. Season the pork chops with salt and pepper. Lightly dredge the pork chops in the flour. Dip the pork chops in the egg mixture, then coat thoroughly with the crushed saltines.
-  Heat the oil in a large skillet over medium heat. Add the pork chops in batches and cook, turning once, until cooked through, 4 to 5 minutes per side; be careful not to let the breading burn.
-  Meanwhile, heat the sauce in a small saucepan over low heat.
- Transfer the pork chops to individual serving plates and top with the sauce.
