Potato Muffins
Instructions:
- 1 cup mashed potatoes
- 1 cup cornmeal
- ½ cup flour
- 3 teaspoons baking powder
- 1 teaspoon sugar (optional)
- 1 teaspoon salt
- 1 egg, beaten
- 2 tablespoons vegetable oil
- Preheat oven to 350 degrees F.
- Sift together cornmeal, flour, baking powder, salt, and sugar.
- Combine beaten egg, oil, potatoes, and milk.
- Beat well then stir into dry ingredients, beating until batter is well mixed.
- Baked in greased muffin pan for 30 minutes.
- Makes approximately 1 dozen muffins.
