Praline Sweet Potatoes
Instructions:
- In 8-quart saucepot, combine sweet potatoes and enough water to cover; heat to boiling over high heat. Reduce heat; cover and simmer until tender, about 25 minutes. Drain; return potatoes to saucepot.
- Meanwhile, prepare praline: Grease cookie sheet. In 1-quart saucepan, combine sugar and water; heat over low heat, stirring gently, until sugar has dissolved, about 1 minute. Increase heat to medium-high and boil rapidly, without stirring, until syrup has turned light golden brown, about 7 minutes. Working quickly, stir in pecans and 1 tablespoon butter until combined and butter melts. Spread pecan mixture in thin layer on cookie sheet; cool.
- To sweet potatoes in saucepot, add milk, remaining 4 tablespoons butter, and salt. With mixer at low speed, beat sweet potatoes until smooth, frequently scraping down side with rubber spatula. Increase speed to medium; beat until fluffy, about 2 minutes longer.
- To serve, spoon potatoes into large bowl. Break praline into small pieces and sprinkle on top. Makes 12 accompaniment servings.
