Puffy Apple Pancake
Instructions:
Caramelized apples are an easy and delicious enhancement for our basic puffy pancake. 2 tablespoons butter or margarine 1â„2 cup plus 2 tablespoons sugar 1â„4 cup water 6 medium Granny Smith or Newtown Pippin apples (2 pounds), each peeled, cored, and cut into 8 wedges 3 large eggs 3â„4 cup milk 3â„4 cup all-purpose flour 1â„4 teaspoon salt
Makes 6 main-dish servings Prep: 15 minutes Cook/Bake: 30 minutes
- Preheat oven to 425°F. In oven-safe 12-inch skillet (if skillet is not oven-safe, wrap handle with double layer of foil), combine butter, 1â„2 cup sugar, and water; heat to boiling over medium-high heat. Add apples; cook, stirring occasionally, until apples are golden and sugar mixture begins to caramelize, about 15 minutes.
- Meanwhile, in blender or in food processor with knife blade attached, blend eggs, milk, flour, remaining 2 tablespoons sugar, and salt until smooth.
- Pour batter over apples. Place skillet in oven and bake until pancake has puffed and is golden, about 15 minutes. Serve hot.
