Pumpkin Muffins
Instructions:
- 2 cups of sifted flour
- 1 tablespoon of baking powder
- 1 teaspoon of salt
- 1/4 teaspoon of cinnamon
- 1/4 teaspoon of nutmeg
- 1/4 teaspoon of ginger
- 1/4 teaspoon of allspice
- 1/4 cup of brown sugar
- 1/2 cup of raisins
- 1 egg, well beaten
- 1/2 cup of milk
- 3/4 cup of cooked pumpkin
- 1/4 cup of molasses
- 1/3 cup of melted shortening
- 1/2 cup of chopped pecans
- Sift the flour, bakin g powder, salt, and the four spices.
- Stir in the brown sugar, raisins, and the pecans.
- Mix together the egg, milk, pumpkin, mo lasses, and the melted shortening.
- Add the pumpkin mixture to the dry ingredients and stir until just moistened.
- Fill greased muffin tins 2/3 full and bake at 400 degrees for 25 minutes.
