Quick Pork With Pineapple, Orange, Basil Sauce
Instructions:
- 1 pound pork tenderloin, cut into 1/4-inch slices (may also substitute turkey breast)
- 1 tsp vegetable oil
- 1 cup pineapple juice
- 2 garlic cloves, finely chopped
- 2 tsp cornstarch
- 1 1/2 tsp dried basil leaves, crushed
- 1 tsp grated orange peel
- 2 oranges, sliced into rounds
- 1 green onion, chopped
- In large skillet, cook and stir pork over medium-high heat in hot oil 3 to 5 minutes or until pork is no longer pink. Remove pork, drain.
- Stir together juice, garlic, cornstarch, basil, and orange peel in skillet until blended.
- Bring to a boil; cook 2 minutes or until sauce is slightly thickened. Return pork to skillet; cook 1 minute or until heated through.
- Arrange pork slices along with orange slices on dinner plates; sprinkle with green onion. Top with sauce. Serve immediately.
