Quick Tuna Pasta Sauce
Instructions:
- Olive oil for frying
- 1 small onion, chopped
- 1 garlic clove
- 3 tablespoons tomato purée mixed with 3 tablespoons water
- 3 anchovy fillets
- 185g canned tuna in oil, drained, but reserve
- 1 tablespoon of oil
- 200g canned chopped tomatoes
- Salt and black pepper to taste
- Heat the oil in a frying pan and fry the onion until soft. Add the garlic and stir in the tomato purée and the anchovies.
- Add the tuna, tuna oil and the tomatoes and simmer for 5 minutes. Season to taste.
- Cook fresh or dried pasta of your choice (allow 125–150g per person of fresh, or 100–120g per person of dried) either according to the packet directions, or following the cooking instructions on page 74 if using homemade.
- Serve the sauce with the pasta.
