A classic snack cake that is not too sweet, the simple ingredients make
it a breeze to throw together. Add in the full flavor of locally grown
apples (preferably from a family orchard trip!) and you can’t go wrong.
It is perfect for breakfast, with a cup of coffee while visiting friends, or
any other time of day.
1 cup granulated sugar
½ cup (1 stick) butter or margarine, melted
3 eggs
2 cups graham cracker crumbs 2 to 3 apples, peeled, cored, and
diced
¾ cup chopped walnuts, optional
Confectioners’ sugar for sprinkling

Apple orchard snack cake
Preheat the oven to 350 F and grease an 8 x 8-inch pan. Blend the
granulated sugar, margarine, and eggs in a large bowl with a spoon.
Stir in the graham cracker crumbs, apples, and walnuts until blended.
Spread the batter in the pan and bake for 40 to 45 minutes, until
firm to the touch. Sprinkle liberally with confectioners’ sugar. Cool and
then cut into squares.
