  Ingredients:
    • 2 cups Brown rice, uncooked
    • 4 1/2 cups Tomato juice
    • 1 medium Onion
    • 1/2 each of Red, yelow, and Greeen peppers
    • 2 cloves Garlic
    • 1/2 cup Fresh cilantro, chopped
    • 3 Tbs. Oil
    • 1 tsp. Chili powder
    • 1 tsp. Salt

How to make
Arroz Entomatado
  • Saute all fresh ingredients in oil.
  • Add all remaining ingredients in with sauteed vegetables and mix together.
  • Place in covered baking dish and bake at 350 F for 1 hour, or until rice is completely cooked.
