    • 1 pound of thick -sliced, lean bacon
    • 1 onion
    • 1 pound of baking potatoes
    • 1/2 pound of Cheddar cheese
    • 8 eggs

How to make
Bacon Potato Pie
  • Cut the bacon slices into square pieces.
  • Fry the bacon pieces until well cooked and then drain on paper towels.
  • Peel the potatoes, grate them, and put them into a bowl of cold water to keep them from discoloring while you prepare the other ingredients.
  • Grate the cheese and mince the onion.
  • Butter a 9 X 13 inch shallow baking dish and preheat the oven to 350 degrees.
  • If you placed the grated potatoes on water, drain them well an d squeeze them dry.
  • Beat the eggs in a large bowl.
  • Add all the other ingredients and stir.
  • Pour the mixture into the baking dish and bake at 350 degrees for about 45 minutes, or until the eggs are cooked.
