BBQ Chicken & Potato Bake

  Ingredients:
    • 5 cups frozen Southern-style hash brown potatoes, thawed
    • 1/2 cup chopped green bell pepper
    • 1/4 cup chopped onion
    • 1 Tbs. Butter, melted
    • 2 cups (8 oz.) shredded Cheddar cheese, divided
    • 4 boneless, skinless chicken breast halves (5 oz. Each)
    • 1/2 cup barbecue sauce

How to make
BBQ Chicken & Potato Bake
  • Mix potatoes, peppers, onion, butter and 1 1/2 cups cheese in buttered 13x9 baking pan.
  • Coat chicken with barbecue sauce; place on top of potato mixture.
  • Bake in preheated 400 F oven 40 minutes or until chicken is cooked through.
  • Top with remaining 1/2 cup cheese.
  • Continue baking 5 minutes or until cheese is melted.
