  Ingredients:
    • 3 tablespoons cold pressed olive oil
    • 1 large onion or 3 cloves garlic, chopped
    • 4 cloves of garlic, chopped
    • 1-1/2 cups brown rice
    • 3-1/2 cups water
    • 15 oz. tomato puree
    • 15 oz. can garbanzo beans, drained
    • 15 oz. can red kidney beans, drained
    • 1/2 green pepper, chopped
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • 1 teaspoon basil
    • Dash of cayenne pepper to taste
    • 1 teaspoon parsley

How to make
Beans and Rice Casserole
  • In a 6-quart pot, sauté onions or garlic for 10 minutes or until light brown.
  • Add green pepper, and continue cooking for another 5 minutes.
  • Add rice and sauté for another minute.
  • Add all other ingredients.
  • Bring to a boil.
  • Lower heat and simmer for 45 minutes
