Ingredients:
51⁄2 oz small round clams;
2 tsp sofrito;
1 cup canned white beans, drained;
3⁄4 cup fish stock;
2 tsp
picada
How to make
Beans with clams
Pick over the clams, discarding any that are damaged.
Put the clams in a large bowl and cover with salted water.
Let soak for 1 hour. This will help the clams to purge themselves of any sand.
Heat the sofrito in a large pan over medium heat.
Stir in the beans, followed by the fish stock.
Simmer the beans for 15 minutes.
Add the picada
Lift the clams out of the water, leaving any sand behind in the bowl, and add to the pan.
Cook for 3 minutes, until the clams open. Discard any clams that stay shut.
Season to taste with salt and pepper.
Serve in soup dishes.
