Blueberry Pecan Cluster Muffins

Ingredients:
1 cup boiling water
2 1/2 teaspoons baking soda
3 cups Kirkland Signature/Newman’s Own Wild Blueberry Pecan Cluster Cereal
2 cups buttermilk
1/2 cup shortening
1 cup sugar
2 eggs
2 1/2 cups flour
1/2 teaspoon salt
How to make
Blueberry Pecan Cluster Muffins
Preheat oven to 375 F.
Mix boiling water and baking soda; let cool.
Pour cereal into a large bowl. Add buttermilk and let stand for 10 minutes.
Cream shortening and sugar. Beat in eggs one at a time.
Sift together flour and salt. Add to creamed mixture alternately with cooled water/soda mixture. Stir in cereal mixture.
Grease muffin pans. Scoop batter into muffin cups. Bake for 20-30 minutes, or until golden brown.
Makes 24 muffins.
Tip: Muffin mix will keep in the refrigerator for 1 week in a covered container.
