  Ingredients:
    • 1 cup boiling water
    • 2 1/2 teaspoons baking soda
    • 3 cups Kirkland Signature/Newman’s Own Wild Blueberry Pecan Cluster Cereal
    • 2 cups buttermilk
    • 1/2 cup shortening
    • 1 cup sugar
    • 2 eggs
    • 2 1/2 cups flour
    • 1/2 teaspoon salt

How to make
Blueberry Pecan Cluster Muffins
  • Preheat oven to 375 F.
  • Mix boiling water and baking soda; let cool.
  • Pour cereal into a large bowl. Add buttermilk and let stand for 10 minutes.
  • Cream shortening and sugar. Beat in eggs one at a time.
  • Sift together flour and salt. Add to creamed mixture alternately with cooled water/soda mixture. Stir in cereal mixture.
  • Grease muffin pans. Scoop batter into muffin cups. Bake for 20-30 minutes, or until golden brown.
  • Makes 24 muffins.
  • Tip: Muffin mix will keep in the refrigerator for 1 week in a covered container.
