A flavored mayonnaise topping is a quick way to add punch to broiled fish.
1⁄4 cup mayonnaise
1⁄2 teaspoon Dijon mustard
1⁄8 teaspoon salt
1⁄8 teaspoon ground black pepper
4 cod steaks, 1⁄2 inch thick (6 ounces each)

Preheat broiler.
In small bowl, mix mayonnaise, mustard, salt, and pepper until blended.
Lightly oil rack in broiling pan. Place cod on rack in broiling pan. Place pan in broiler, 4 inches from heat source. Broil cod until just opaque throughout, 5 to 7 minutes. Remove broiling pan from broiler. Brush mayonnaise mixture on fish.
Return pan to broiler; broil until mayonnaise mixture is lightly browned and bubbling, 1 to 2 minutes longer.
