Ingredients:
- 1 large onion, chopped
- 1 medium red bell pepper, chopped
- 1-1/2 tsp.salt
- 1/2 cup chopped fresh basil
- 1/2 cup turkey or chicken stock, optional
- 1/2 pound fresh mushrooms, sliced
- 1/2 tsp.freshly ground pepper
- 2 cups shredded Gruyere or Swiss cheese
- 2 garlic cloves, minced
- 2 medium carrots, sliced
- 1/4 inch thick
- 2 medium celery ribs, sliced
- 1/4 inch thick
- 2 medium zucchini, halved lengthwise and cut into 1/2-inch-thick slices
- 2-1/2 cups long-grain brown rice
- 4 Tbsp. unsalted butter.
